I have been incorporating fruit and vegetable smoothies into my daily diet the last few weeks. Many of you have asked that I share the recipes and I am happy to do so. I just experiment each day with what I have on hand. Today’s creation was amazing! Avocados are full of nutrients for the brain and suppose to boost energy so I created a sweet Avocado Strawberry Smoothie today. I used a little milk substitutes in this one, which I normally do not do, but it gave it a wonderful texture. It was so creamy and delicious and really energized...

Chicken pot is comforting, filling and a fantastic way to use up leftover buts of chicken and bags of partially used frozen vegetables. This pot pie is completely from scratch and is an absolute snap to make. I leave potatoes out of my pot pie, opting instead to serve it over a bad of creamy mashed potatoes and a drizzling of chicken gravy. The cooked pies freeze so well that you might consider making one large one for dinner and several smaller ones for lunched to freeze. I have included instructions on how to do the pocket pies...

Valentine’s Day is coming up and you know what that means- chocolate, chocolate and more chocolate! I love making a special treat for dessert on Valentine’s Day for after we devour our traditional heart shaped meatloaf, roasted red potatoes and heart shaped dinner buns (awww! so sweet) and a chocolate cake with this frosting is almost always what I make.  Once, way back when, I was the queen of Home Ec. I rocked it and I loved it more than anything.  I had as many periods of food related class as possible. Could this have been an indicator of my food blogging days to come? Hmm…thoughts to ponder! Anyway I loved it and a couple recipes I learned there in humble Home Economics have been family favorites of ours since we’ve been married. Sour Cream Chicken Enchiladas are one of those recipes. It’s easy and delicious, makes really great leftovers and is easy to double...

I cook and bake a LOT. I have a family of 7 and we very rarely eat out. We all know that groceries are not getting any cheaper and one of the ways I combat high prices in the store is to make my own mixes. You know, all of those little packets that you pick up- the taco seasoning, the ranch dressing mix, gravies, etc. I just make them in bulk and it has saved us a bundle! I thought that today I would share a couple of my favorite mixes with you and how I store them so they will last a long time. Herbs and spices should be kept in a cool,...

Sometimes I like to serve my family something just a little different. These eggs are a twist on Huevo Rancheros, the eggs aren’t poached in salsa, but they make a fabulous quick and filling breakfast or brunch treat. My kids love them and call them “Fancy Eggs” but there is really nothing fancy at all about the humble egg, tortilla and bean dish. Simple food at it’s best is almost always better to me than fancy, complicated recipes. A big bonus here is that they go together in a flash and I can have them on the...
